Tasty Treats Tuesday - Amazing Meatloaf

When we got married, Walt informed me that he didn't like meatloaf. (That's putting it nicely...he couldn't stand his mom's meatloaf.) After convincing him to try THIS version, Walt is now a HUGE fan of meatloaf. To be able to make something he enjoys better than his mom's version is a dream for a wife!

Brown Sugar Meatloaf
Ingredients: Serves 6-8

• 1/2 cup packed brown sugar
• 1/2 cup ketchup
• 1 TB Worcestershire sauce

• 1 1/2 pounds lean ground beef
• 3/4 cup milk
• 2 eggs
• 1 1/2 teaspoons salt
• 1/4 teaspoon ground black pepper (optional)
• 1 small onion, chopped (I used 1 TB dried chopped onion flakes)
• 1/4 teaspoon ground ginger
• 2 garlic cloves, minced (or ½ tsp garlic powder)
• 1 TB Worcestershire sauce
• 3/4 cup finely crushed saltine cracker crumbs

Directions:
Preheat oven to 350 degrees. Lightly grease a 9x5 inch loaf pan.

If you have time to let the meat marinate: Mix the beef through the saltine cracker crumbs in a medium bowl and refrigerate anywhere from one hour to one day. If you don’t have time to marinate, no worries. Shape the meat into a loaf and place in loaf pan. (If you don’t use lean ground beef, place two pieces of bread in the bottom to soak up the grease.)

Mix the brown sugar, ketchup, and other 1 TB of Worcestershire together in a small bowl and spread on top of loaf.

Bake in preheated oven for 1 hour or until juices are clear.

(A faster cooking version is to do mini-loaves in a mini-loaf pan. Cook for 30 minutes at 350 degrees and then check the temp with a meat thermometer. (or cut one open to check if it’s done) Cook up to 15 more minutes if needed until juices run clear.)

It serves 6-8. We did mini-loaves of a bigger batch...we counted 6 points/mini-loaf with the sauce.

It really depends on how lean your beef is. You can use eggwhites instead of eggs. 3 eggwhites is only 1 point as opposed to 4 points for 2 eggs. The sauce adds some points. You could try it without the sauce and just use a little ketchup or bbq too.

For sides, we had green beans and in the crockpot, I quartered small russet potatoes with a tiny bit of olive oil and italian seasoning...let it cook in the crockpot for a few hours and it was so good.
